Christmas!!!!!!!

Christmas is a time to share. Share good food with good company.... Most people will be attending Christmas party with store brought gift.

For me most the time I would like to bake something as a gift for people. It can satisfy my baking urge as well as seeing kids and adults likes my bakes makes me happy. As the saying goes " the cook does not like to eat the food he cooks" for me I enjoy baking n of coz I do love my bakes but one can only eat that much but I would like to bake more heehee. So any festive season is a good excuse for me to bake n share.

I use to bake a lot till my precious boy arrive to this world. So I only bake occasionally and when requested.

Ok here is the bake of the season...... Cookies, Swiss roll n ice cream ( oops ice cream not bake but at least not store bought)

Recipe:

1) Cut out sugar cookies (adopted from Autumn Carpenter)
250g butter, soften
85g cream cheese, soften
135g -150g powder sugar/ icing sugar
1 egg
1 tsp vanilla
420g flour

Mix soften butter and cream cheese till light and fluffy, add in powder sugar and mix well. Add in vanilla extract and egg, mix well. Lastly add in flour and mix till incorporated without any trace of flour left. Do not over mix. Take out the dough and put in fridge for about 15-30mins.

Roll out on desire thickness between sheet of baking paper and use your favorite cutter to cut. Put the put out cookies in the fridge for 10mins before baking.

Set oven at 180 degree and bake for 10-15mins or until the edge is brown. Cool and ready for decorating.

Home made Marshmallow fondant
2 cups of mini marshmallow
1 cups of icing sugar / powder sugar
2 tbsp of water

Melt the marshmallow with water on double boiler or microwave. Once it's melted, add icing sugar and mix till a dough. Continue to knead till its not sticky. Add more icing sugar if necessary.

You may want to add flavoring or colour to your fondant. Refrigerate overnight before use.
